Springtime Salad with Carabao Mango, Avocado, Goat Cheese with Balsamic Vinaigrette

I recently discovered carabao mangos which are rumored to be the sweetest mango variety and I can attest they are my favorite. So I built a salad around these golden jewels. This salad can be served as a light meal or as an accompaniment to the main course. And don’t forget good fresh bread!

Carabao Mango

1 Bib lettuce head, washed

1 avocado, sliced into bite-size

1/2 petite tomatoes, sliced

2 ounces goat cheese, crumbled

Balsamic Vinaigrette

½ cup olive oil

¼ cup balsamic vinegar

1 teaspoon honey

1 teaspoon Dijon mustard

1 shallot, minced

1 clove of garlic, minced

salt and ground black pepper to taste

Place lettuce on a large plate. Arrange the remaining ingredients on top of lettuce.

Combine ingredients for the vinaigrette in a dressing shaker bottle. Shake vigorously and severe with salad.
